Renames the project throughout:

Module path: bumbleforge.com/kglitchy/sfin-bridge-cli → bumbleforge.com/kglitchy/simplefin
Binary name: simplefin (.gitignore, cobra Use, README, help text)
Config file: ~/.sfin-bridge-cli.yaml → ~/.simplefin.yaml
Env var prefix: SFIN → SIMPLEFIN (so SIMPLEFIN_ACCESS_URL)

Also fixes a gofmt issue in main.go.

Breaking change: existing ~/.sfin-bridge-cli.yaml configs and SFIN_ACCESS_URL env vars are no longer picked up; users need to rename their config file or re-run simplefin claim.
